The chemistry behind baking

Baking and chemistry go hand in hand. A recipe draws parallels with an experimental procedure in that each has to be designed so that the ingredients come together in the right order, resulting in a final product. Each ingredient undergoes a chemical change and performs a specific function as they react with one another in the process of baking of a cake
