Soaps are potassium or sodium salts of fatty acids, produced by the break-up of fats in a reaction called saponification. Soap molecules have characteristic hydrophilic and hydrophobic portions. The hydrophobic tail contains no electronegative atoms, so does not bond with water. However, the hydrophilic head forms hydrogen bonds with water and acts as an emulsifier.
